🌿 Anti-Inflammatory One-Pot Meal for Endometriosis & Fertility 🌿

I love to cook and have used the advice from @studio.nourish to make my own delicious meals. The results? All my inflammatory markers are in the normal range, so if you’re on a health kick, try this meal for happy eating 🥣

🔪 Ingredients:
- 1 small red onion, finely chopped
- 2 cloves garlic, finely chopped
- 1-2 tablespoons of good quality olive oil
- 1 grated carrot
- 1 chopped sweet red pepper
- 1 can butter beans, drained and rinsed
- 1 can organic chopped tomatoes
- 2 tablespoons sun-dried tomato paste or pesto
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper to taste
- Lentil pasta (I’ve used the Plants branded one)
- Handful of fresh spinach (optional)

👩‍🍳 Instructions:
1. In a pan, sauté the chopped onion and garlic in olive oil over medium heat for about 10 minutes, covered, until softened.
2. Add the grated carrot and chopped red pepper, sautéing for another 5 minutes until they soften.
3. Stir in the butter beans, chopped tomatoes, sun-dried tomato paste, oregano, basil, salt and black pepper.
4. Cover the pan and let it simmer until you see the olive oil separate from the liquid (about 10 minutes).
5. While that’s cooking, prepare your lentil pasta according to the package instructions.
6. Serve the sauce over the pasta and top with spinach if desired. Enjoy your nourishing, protein-packed meal!

I struggled with endometriosis and infertility, which made every day a battle against my own physical limitations. Today, I understand that moving my body every single day is the most effective way to maintain hormonal balance, release tension and foster a deep connection between my mind and body. It’s become my secret sauce for well-being! 🌱💖

🌟 Real life, raw vibes! Just finished work and this is me!! I didn’t have the energy for a polished video, but I’m excited to share one of my favourite endo and fertility-friendly recipes! 💚

I typically whip up one-tray or one-pot meals, and tonight’s dish is a delicious Greek-inspired creation that’s so easy to make.

Ingredients:
- Carrots 🥕
- Potatoes 🥔
- Butternut squash
- 3 cloves garlic
- Olive oil
- Oregano
- Juice of 1 lemon 🍋
- Splash of apple cider vinegar
- Salt
- Bone Broth
- 1 tbsp Dijon mustard
- Skinless boneless chicken thighs (or bone-in thighs/drumsticks for more flavour)

For the Salad:
- Cooked Puy lentils
- Pomegranate seeds
- Pine nuts
- Feta cheese
- Olive oil
- Chopped parsley
- Lemon juice

Instructions:
1. Peel and chop the carrots, squash and potatoes into big chunks.
2. Make the marinade: Combine garlic, olive oil, oregano, lemon juice, apple cider vinegar, salt and Dijon in a jar. Shake it up! 💪
3. Coat everything with the marinade in a baking tray then add bone broth to the jar, shake and add to the mixture.
4. Cover with foil and bake at 180°C (350°F) for 45 mins.
5. Remove foil; if using skinless chicken, take it out and let the veggies cook for another 30 -45 mins. Add the chicken back for the last 10 minutes. Otherwise, just keep everything in the tray to brown.

For the Salad:
- Cook lentils as per package instructions. Mix with pomegranate, pine nuts, feta, olive oil, parsley and lemon juice.

Enjoy this easy, nutritious meal and let it inspire your cooking! 💖

I’m very excited about this year as there will be some big changes. 👀😍

I’m not afraid to admit that this makes me very nervous, but I’m trying to be super positive about it and also sit with any uncomfortable feelings too. I used to think that the amount of failures and disappointment I had to deal with in my daily life was a curse, but I’m trying not to let the challenges of the past feed into my psyche about the future. 🔮
